Ultrasonic homogenization of milk uses the cavitation effect of ultrasonic homogenizer in milk to achieve homogenization effect. The ultrasonic homogenizer consists of two parts: ultrasonic homogenization system and ultrasonic driving system (ultrasonic generator). The ultrasonic homogenizer mainly includes ultrasonic transducer, ultrasonic horn and ultrasonic tool head, which are used to generate ultrasonic vibration and emit the vibration energy into the liquid.

Fresh milk contains a large number of fat balls with different particle sizes. The floating of these fat balls will form a layer of milk oil layer on the surface of milk, resulting in stratification of milk, which greatly affects the appearance and taste of milk and dairy products. The homogenization of milk is to break the fat ball in the milk to reduce or even disappear its buoyancy, so as to prevent the stratification of milk and achieve the effect of homogenization of milk.

Ultrasound can produce cavitation in milk. When this cavitation reaches a certain intensity, it can break the fat ball in milk and achieve the effect of homogenization. The effect of ultrasonic homogenization of milk is related not only to power density (or sound intensity), but also to ultrasonic frequency and ultrasonic treatment time. Under the appropriate ultrasonic frequency, the ideal dispersion effect can be achieved with the minimum power density in a certain time.
