Scientific and rational selection of less contaminated fruits, vegetables, wild vegetables is rich in nutrients, and generally does not pollute. Some vegetables grown in soil, such as fresh lotus root, potato, taro, winter bamboo shoots, radish, garlic, cabbage, etc., do not usually use pesticides. In the pretreatment to food residue
There are two forms of pesticide residues, one is on the surface of vegetables and fruits, and the other is that in the process of growth, the pesticide directly enters the root and stem of vegetables and fruits. Experts recommend the following methods to effectively remove pesticide residues in vegetables:
Soaking water washing: the main pesticides that pollute vegetables are organophosphorus insecticides, and organophosphorus insecticides are difficult to dissolve in water. This method can only remove some of the contaminated pesticides. Water washing is a basic method for removing other contaminants on vegetables and fruits and removing residual pesticides. It is mainly used in leafy vegetables, such as spinach, golden needle vegetable, leek, lettuce and Chinese cabbage. First, rinse off the surface dirt first, then soak it in water, but the soaking time should not exceed 10 minutes, so as to prevent the surface residual pesticide from infiltrating into the vegetables. Fruit and vegetable cleaning agents can increase the dissolution of pesticides, so a small amount of fruit and vegetable cleaning agents can be added when soaking. After soaking, wash it 2-3 times with water.
Alkaline water immersion method: organophosphorus insecticides are decomposed rapidly in alkaline environment, so this method is an effective measure to remove pesticide pollution and can be used in various vegetables and fruits. The method is to rinse the surface dirt first and soak it in alkaline water (500 grams of water in 5-10 ml) for 5-15 minutes, then rinse with water for 3-5 times.
Peeling method: the amount of pesticide on the surface of vegetables and fruits is relatively large, so peeling is a good way to remove pesticide residues. It can be used for apples, pears, kiwifruit, cucumbers, carrots, wax gourd, pumpkin, pumpkin, eggplant, radish and so on. When handling, prevent skin and vegetables and fruits from mixing again and pollute again.
Ozone elution method: cleaning and soaking all kinds of fruits and vegetables with the ozone or ozone water generator sold in the market. It is easy, safe and reliable. The cleaning and soaking time is 10-20 minutes. It is generally believed that most of the pesticide residues can be removed. But there are also experts point out that most of the sale of fruit and vegetable detoxification machine is to use an oxygen generator with an external tube, if the technology does not pass or the work power is too small, it may lead to low gas production and low ozone concentration, and after mixing with water, it can not play a bactericidal effect. In addition, if the sealing performance of the machine is not good, it may also cause ozone leakage and affect human health. The main side effect of ozone is its strong oxidation ability. When the concentration is above 1.5ppm, people must leave the field, otherwise it will cause the stress response of the respiratory system, and it will cause a serious reversible injury.
Elimination of biodegradation enzymes: remove pesticide residues from vegetables and fruits, add a separate packaged enzyme to clear water and vegetables for 8-15 minutes. Depending on the situation, dosage and prolongation of action time can be increased. After soaking, wash it 2 times with water.
Storage method: pesticides in the environment can be slowly decomposed into harmless substances to human body over time. So the preserved fruits and vegetables can be stored in a certain time to reduce the amount of pesticide residues, suitable for apple, kiwi, winter melon and other kinds of non perishable species, generally stored for more than 15 days. At the same time, it is advised not to eat fresh fruits that are not peeled immediately.
Heating method: carbamate insecticides decompose faster with the increase of temperature. Therefore, some other methods are difficult to deal with vegetables and fruits can be removed by heating some pesticides. Commonly used in celery, spinach, Chinese cabbage, cabbage, cauliflower, green peppers, beans, etc.. First wash the surface dirt with clean water, remove it in boiling water for 2-5 minutes, then rinse with water for 1-2 times. According to the actual situation, combined use of the above methods will achieve better results.
